Chennai Bakery Style Chicken Puff Recipe

Chicken puff is a kind of pastry and it is very famous in my home town Chennai city. You really have to taste the Chennai chicken puff recipe while you visit Chennai. 

What is Chicken Puff?

Chicken Puff is one of the snacks which is very famous in south India especially Tamil Nadu. It is a kind of pastry with chicken filling. Many countries have different recipes for making the chicken filling. They use different herbs and ingredients as per their taste and choice. 

Chicken Puffs recipe without oven Method:

Today I am going to tell you how to make Chennai-style chicken puff without using a microwave oven. In many Indian homes, they don't have microwave ovens. For those people, this recipe will be very helpful.

Ingredients required to make Chicken Puff:

  • Chicken-250 grams(boneless chicken is preferred)
  • Potato-2 medium-sized(for additional flavor and binding) 
  • Red Chili Powder- 2 tablespoons or as per your taste.
  • Bay leaf and cardamom powder- 1 tablespoon
  • Ginger and Garlic- 1 inch and 5 cloves(you can also use ginger garlic paste)
  • All-purpose flour- half a kilogram(you can also use wheat flour)
  • Baking Powder (Samayal Soda)- 2 tablespoons
  • Full Egg (Mulu Muttai)-2
  • Oil and ghee (Ennai)-As required
  • Onion (Vengayam)-2 bid sized
  • Salt (Uppu in Tamil)- As required
  • Coriander and mint leaves (Kothamalli matrum pudina)- As required

Chennai Style Chicken Puff Recipe Cooking Method:

  1. Chop the boneless chicken into fine pieces, then put the chopped chicken pieces in a mixer and grind it like a bunch.
  2. Then add two cups of water to a vessel and add the bunch of chicken to it and add some salt. Allow it to cook well till the chicken becomes soft and tender.
  3. In a separate vessel boil the potatoes with some salt and peel off its skin, then chop the potato into fine pieces.
  4. In a wide pan, add two tablespoons of oil and two tablespoons of ghee and allow it to heat.
  5. Add finely chopped onions, coriander leaves, mint leaves, ginger, and garlic and saute it well till the raw smell of onion goes off.
  6. Then add cooked chicken to the sauteed mixture and add two tablespoons of chili powder, bay leaf powder, cardamom powder, and chopped potatoes to it and saute well.
  7. Allow the chicken mixture to cook perfectly, in the meantime, we will prepare a batter.
  8. In a mixing bowl, add half kilo all-purpose flour, egg yolk, salt, baking powder, and some water.
  9. Knead it till it becomes a very smooth batter because the smooth batter is a secret of crispy puff.
  10. Immediately divide the batter into parts and start to roll it. You need 4 parts for each puff you make.
  11. Place the rolled batter one above another and roll it again. Now you will get the layered sheets like bakery puff sheets.
  12. Then place the small number of chicken fillings in the center of the batter and cover its edges.
  13. Then seal the edges with a flour and egg white paste.
  14. Now heat the oil in the pan, once it gets heated start to fry the puffs. Fry it till it becomes golden brown in color, repeat the same procedure for all chicken puffs.

Notes (Tips for tasty chicken puff):

  • Don't add salt while making the fillings because we already added an adequate amount of salt in a chicken bunch as well as a potato.
  • Then prepare for batter only after the fillings get ready because as time goes on a batter will start to absorb excess oil. So always prepare batter just before cooking.
