For Poli batter preparation:
  • Whole Wheat flour (Gothumai Maavu)- 250 grams
  • Salt (Uppu in Tamil)- As required
  • Ghee (Nei)- 3 tablespoons
  • Warm milk (Paal)- 1 cup

Paruppu Poli recipe cooking method:

  1. Before one hour soak the Bengal Gram dal in water and then drain the water and allow the Bengal gram to dry.
  2. Then by using the cooker cook the Bengal gram dal and again allow it to dry.
  3. For the dough, add wheat flour, salt, ghee, and stir it well.
  4. Now add warm milk to it and make it like a soft dough. It should slight pasty
  5. You can also use hot water instead of milk, but I prefer to use warm milk because it gives extra smoothness to the dough.
  6. Grind a Bengal gram dal as a powder using the mixer and keep it in a separate bowl.
  7. Heat some quantity of ghee in the wide pan, add jaggery and allow it to boil. Add a small quantity of milk to the jaggery to remove the dust.
  8. Now add the powdered Bengal gram dal to the boiling jaggery and stir it well
  9. Then add Cardamom and grated coconut for flavors and take it off from the stove.
  10. Now we are going to prepare Poli, take a small part of the dough and roll it with the help of your hands.
  11. Make it as a thin layer and put some Bengal gram dal stuff in the center and cover the edges of the dough.
  12. Now again roll it with your hands and coat it with ghee on one side.
  13. Heat the pan and add some ghee and put this Poli on the pan, after 30 seconds. Turn the Poli and coat some ghee over it.
  14. Repeat this procedure until the Poli is perfectly cooked on both sides.
  15. Decorate The Paruppu Poli with some grated coconut and serve hot.
