To make a tasty dosa batter, immerse 1 kg of rice in normal water and immerse 150 grams of urad dal and two spoons of fenugreek seeds in two separate bowls. Allow it to soak fully for 3 hours and then grind the rice and urad dal into a fine paste. Add an adequate amount of water to it and mix it into a fine batter. Keep it aside for 3 hours till it gains a correct consistency. I prefer to do this batter preparation process one day before cooking. You can store this batter in the refrigerator for 3 days.
Podi Recipe for tasty podi:
To make a Thanjavur special podi, heat two tablespoons of oil in a pan and add a quarter cup of chickpeas, half cup of black gram in the heated pan. Roast the chickpeas and black gram till it changes to golden color. Then add ten to fifteen dried red chilies as per your need and add one tablespoon of sesame seeds, a quarter spoon of asafoetida, one strand of curry leaves, and the required amount of salt. Roast the above mixture very gently and allow it to cool for 15 minutes. Then transfer it to a blender and grind it to a coarse mixture. Store this podi powder in an airtight container for future use.
Podi Dosa recipe or spicy toppings dosa recipe:
Heat the non-stick pan in a low flame, add two drops of oil in a pan. Now make a thick dosa and gently sprinkle the podi above it. Add a necessary amount of oil inside and outside the dosa, cover the dosa with a lid, and wait for two minutes. If you want more crispy dosa, turn a dosa and wait for one minute. Spicy Chutney recipe for the side dish:
To make a spicy chutney, take two big onions, three juicy tomatoes, six red chilies, ten garlic cloves, a small piece of ginger, two strands of curry leaves. Coarse chop the two onions and three tomatoes. Add some oil in the pan, add the coarsely chopped onion to it and add a piece of ginger, garlic cloves, curry leaves, six red chilies and saute it well. Now add the coarsely chopped tomatoes to it, till the juiciness of tomato begins to drain. Transfer the mixture to a blender and add an adequate amount of salt to it. Grind to a fine paste and for tempering heat some oil in the pan, add black gram, mustard seeds, curry leaves and add the tempering to the chutney. Serve the podi dosa with this spicy chutney.
